Onion Dip

This onion dip is inspired from the iconic Kiwi Maggi Onion Soup recipe, which in it’s most basic form is soup mix, reduced cream and lemon juice. So delicious on its own with some ready salted chips! But every now and then I like to dress her up a bit.

I like adding in the fried shallots and spring onions for taste and extra texture and the Greek yoghurt lightens it up. Especially because I like to add a drizzle of olive oil that’s been infused with freshly cracked pepper.

This is a simple but delicious dip for your next party or movie night.

Ingredients

  • 1 32g pack Maggi Onion Soup mix*
  • 1 can Nestle reduced fat cream
  • ½ cup full fat Greek yoghurt
  • ¼ cup fried shallots
  • 1 large stalk spring onion, finely chopped and divided in 2
  • 1 lemon, juiced (more or less according to your taste)
  • ½ teaspoon freshly ground pepper
  • 4-5 tablespoons extra virgin olive oil

Instructions

  1. In a large bowl, mix soup mix, reduced fat cream, yoghurt, fried shallots, half the spring onions (greens and whites) and half the lemon juice. Taste and adjust with more lemon juice if required.
  2. Spread in your serving bowl. Make some large swirls on top for the olive oil to sit in
  3. Put the olive oil, remaining spring onion and freshly ground pepper in a small pan. Put the pan over medium heat until the spring onions and pepper start to sizzle, the onions become slightly brown and everything is fragrant.
  4. Spoon the mixture over your dip and enjoy with chips or fresh crunchy carrot & celery sticks.

Notes

*You should be able to find this easily in NZ. However, in Australia, this isn’t as easy to find. Try a kiwi shop or the international isle of your local supermarket. You can replace it with a regular French Onion Soup mix, but only use ¾ of the packet. I find the whole pack too salty. If you don’t mind that, add in the whole thing. It doesn’t taste AS good as the Maggi Soup mix, but is still tasty.
